Spring Dish: Vibrant Veggie Noodles
Spring is finally here, and what better way to celebrate than with a delicious spring recipe?
My advice is always to fuel your body with a healthy balanced plate, which is exactly what this edamame bean noodle dish with shiitake mushrooms, cashews and greens does.
Ingredients:
- Noodles (of your choice)
- Shiitake mushrooms
- Lime juice
- Oil (olive or avocado depending on preference)
- Garlic
- Cashews
- Spring onions
- Tamari sauce
- Sesame oil
- Fresh watercress
- Bitter salad greens
- Wild Garlic
Optional:
- Chilli flakes for an added kick
- Coriander to dress
Method:
- Add noodles to boiling water
- In a frying pan, add shiitake mushrooms and any other mushrooms you have
- Squeeze a little lime over them and a little olive oil or avocado oil
- Add a chopped garlic clove and the cashews.
- Sprinkle a few chilli flakes
- Toss these for a few minutes then add chopped spring onions and cook for another minute
- Add a slash of tamari sauce, a dash of sesame oil and a squeeze of lime
- Drain noodles and add to the mixture, off the heat
- Chop fresh watercress, wild garlic or bitter green salad leaves and toss into the noodles
- Sprinkle with coriander
- Enjoy!
