Spring Dish: Vibrant Veggie Noodles

Spring is finally here, and what better way to celebrate than with a delicious spring recipe?

My advice is always to fuel your body with a healthy balanced plate, which is exactly what this edamame bean noodle dish with shiitake mushrooms, cashews and greens does. 


- Noodles (of your choice)

- ⁠Shiitake mushrooms

- ⁠Lime juice

- ⁠Oil (olive or avocado depending on preference)

- ⁠Garlic

- ⁠Cashews

- ⁠Spring onions

- ⁠Tamari sauce

- ⁠Sesame oil

- ⁠Fresh watercress

- ⁠Bitter salad greens

- Wild Garlic


- ⁠Chilli flakes for an added kick

- ⁠Coriander to dress


  1. Add noodles to boiling water 
  2. In a frying pan, add shiitake mushrooms and any other mushrooms you have
  3. Squeeze a little lime over them and a little olive oil or avocado oil
  4. Add a chopped garlic clove and the cashews.
  5. Sprinkle a few chilli flakes 
  6. Toss these for a few minutes then add chopped spring onions and cook for another minute 
  7. Add a slash of tamari sauce,  a dash of sesame oil and a squeeze of lime
  8. Drain noodles and add to the mixture, off the heat 
  9. Chop fresh watercress, wild garlic or bitter green salad leaves and toss into the noodles
  10. Sprinkle with coriander 
  11. Enjoy!
